Whipped Cottage Cheese Sandwiches

For the Egg Salad Sandwich

For the Green Goddess Pesto Sandwich

  • Roland® Basil Pesto
  • Ciabatta bread
  • 2 small cucumbers, thinly sliced
  • 1/2 cup sprouts
  • 1/2 avocado, smashed
  • 1 tablespoon chives
  • 1 tablespoon green onion
  • 1/4 cup whipped cottage cheese
  • Sea salt, freshly cracked pepper and olive oil, to taste

For the Spicy Harissa Sandwich

  • Roland® Harissa Red Chili Spread
  • Olive bread
  • 1/2 avocado, smashed
  • 3-4 slices of herb roasted turkey
  • 2 slices of bacon
  • 1/4 cup whipped cottage cheese
  • heirloom tomato
  • red onion
  • Sea salt, freshly cracked pepper, and olive oil, to taste

Directions

For the Egg Salad Sandwich

  1. Bring a large pot of water to boil, then add all four eggs. Set a timer for 7 minutes and after 7 minutes, remove one egg and place it in a bowl of water with ice. This method stops the cooking and gives us the juicy, soft-boiled egg. Continue cooking the rest of the eggs for an additional two minutes, then remove and place in the ice bath
  2. Add the three, 9 minute boiled eggs, in a bowl with Dijon mustard, chives, whipped cottage cheese, sea salt, and cracked black pepper. Use a fork to smash everything together into a chunky, consistent mixture
  3. Add half of the smashed eggs to one side of the bread. Make a well in the center with the back of a spoon and add the soft-boiled egg to it. Cover with the remaining smashed eggs. Top with spicy chili onion crisp. Best served immediately

For the Green Goddess Pesto Sandwich

  1. In a small bowl, mix together whipped cottage, cheese, chives, and green onions
  2. Add cottage cheese spread to one slice of the bread and basil pesto spread to the other. Then, assemble with smashed avocado, thinly sliced cucumber, sprouts, seasonings and olive oil. Best served immediately

For the Spicy Harissa Sandwich

  1. Mix whipped cottage cheese, and spicy harissa together until smooth and combined
  2. Feel free to lightly brush olive oil on each slice of bread and toast on a hot skillet for extra crunch or enjoy as is. Add smashed avocado on one slice of the bread and harissa spread on the other. Then, build your sandwich starting with Turkey, bacon, tomato, sliced red onion, seasonings and olive oil. Best served immediately
