Vegan Garlic Confit Aioli

This aioli is the perfect addition to any dish. Made with our new Roland® Aquafaba, it's airy, flavorful, and vegan!
Ingredients
- 4-5 cloves Roland® Garlic Confit, mashed
- ¼ cup Roland® Aquafaba
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice
- ½ teaspoon salt (adjust to taste)
- ¾ cup neutral oil (e.g. sunflower, grapeseed, or light olive oil)
Directions
- Using a fork, mash the Roland® Garlic Confit cloves into a smooth paste.
- In a tall mixing container or blender cup, combine Roland® Aquafaba, Dijon mustard, lemon juice, and salt
- Using an immersion blender (or high-speed blender), begin blending the aquafaba mixture. With the blender running, slowly drizzle in the oil in a steady stream to allow proper emulsification. Blend until the mixture becomes thick and airy
- Add the mashed garlic confit and blend briefly to combine
- Taste and adjust the seasoning as needed. Store in an airtight container in the refrigerator for up to 1 week
