Vegan Garlic Confit Aioli

This aioli is the perfect addition to any dish. Made with our new Roland® Aquafaba, it's airy, flavorful, and vegan!

 

Ingredients

  • 4-5 cloves Roland® Garlic Confit, mashed
  • ¼ cup Roland® Aquafaba
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • ½ teaspoon salt (adjust to taste)
  • ¾ cup neutral oil (e.g. sunflower, grapeseed, or light olive oil)

Directions

  1. Using a fork, mash the Roland® Garlic Confit cloves into a smooth paste.
  2. In a tall mixing container or blender cup, combine Roland® Aquafaba, Dijon mustard, lemon juice, and salt
  3. Using an immersion blender (or high-speed blender), begin blending the aquafaba mixture. With the blender running, slowly drizzle in the oil in a steady stream to allow proper emulsification. Blend until the mixture becomes thick and airy
  4. Add the mashed garlic confit and blend briefly to combine
  5. Taste and adjust the seasoning as needed. Store in an airtight container in the refrigerator for up to 1 week
