Udon Noodles with Lamb

This stir-fried udon recipe by Sara @dieteticaesthetic makes for the perfect weeknight dinner. With vegetables, organic udon noodles, and lamb, it's bursting with flavor.
Ingredients
- 1 pack Roland® Organic Udon Noodles
- 1 tablespoon avocado oil
- 1 onion
- 4 cloves garlic
- 1/4 cup shredded carrots
- 1/2 lb sliced lamb
- 2 bok choy
- 2 tablespoons sesame oil
- 4 tablespoons soy sauce
- 2 tablespoons hoisin sauce
- 4 green onions
Directions
- Chop your veggies and set them aside
- Cook udon noodles according to the package instructions
- In a pan over medium heat, add oil, onions, garlic, and carrots, and sauté for 3 minutes
- Add lamb and cook for another 3 minutes before adding bok choy
- Add sesame oil, soy sauce, and hoisin sauce, and stir until combined
- Add green onions and udon noodles. Serve with sesame seeds
