Shakshuka with Tomato Sofrito

A quick and easy shakshuka recipe featuring Roland Foods new item Tomato Sofrito!

Directions

  1. Heat a drizzle of olive oil in a cast-iron skillet, then add the tomato sofrito. After a few minutes, add the chopped tomatoes and sauté for about 15 minutes
  2. Once the tomatoes have softened, use a spoon to mash them down. Add in the harissa paste and adjust with salt as needed
  3. Using a spoon, scoop out 4 spots in the cast-iron pan and gently drop the eggs in place. Season the tops of the eggs with salt and pepper
  4. Cover and let the eggs cook until poached
  5. Garnish with pistachios, parsley, mint, and garlic chips
  6. Serve with the pita bread, za’atar garlic oil, and preserved lemon paste
