Shakshuka with Tomato Sofrito

A quick and easy shakshuka recipe featuring Roland Foods new item Tomato Sofrito!
For the Shakshuka
- 13oz / 1.5 cups Roland® Sofrito
- 3 tomatoes, diced
- 1 tablespoon Roland® Harissa Red Chili Spread
- 4 eggs
For Serving
- 2 cups labne
- 2 tablespoons Roland® Preserved Lemon Paste
- Chopped pistachios, to garnish
- Parsley, to garnish
- Sliced avocado, to garnish
- Mint, to garnish
- Pita bread, for dipping
- Roland® Garlic Chips, to garnish
For the Za'atar Garlic Oil
- 1 cup Roland® Garlic Confit (cloves and oil)
- 1/2 cup Roland® Extra Virgin Olive Oil
- 1 tablespoon Roland® Za’atar
- Zest of 1 lemon
- Salt, to taste
Directions
- Heat a drizzle of olive oil in a cast-iron skillet, then add the tomato sofrito. After a few minutes, add the chopped tomatoes and sauté for about 15 minutes
- Once the tomatoes have softened, use a spoon to mash them down. Add in the harissa paste and adjust with salt as needed
- Using a spoon, scoop out 4 spots in the cast-iron pan and gently drop the eggs in place. Season the tops of the eggs with salt and pepper
- Cover and let the eggs cook until poached
- Garnish with pistachios, parsley, mint, and garlic chips
- Serve with the pita bread, za’atar garlic oil, and preserved lemon paste
