Jalapeño Cornbread Waffles Rancheros

Difficulty: Easy | Makes: 10-12 Servings

Ready to spice up breakfast? These waffles incorporate our jalapeño pepper slices for a kick of heat against the sweet cornbread batter.



  • 1.5 cup cornmeal
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 2 cups milk
  • 3 tablespoons sugar or honey
  • 4 tablespoons of melted butter slightly cooled
  • 2-3 tsp of Roland® Hot Jalapeño Peppers Sliced

Optional For Serving:

Fried egg, salsa or chili, and black beans


  1. In a large bowl, mix flour, cornmeal, baking powder, sugar, and salt
  2. In another bowl, mix milk, melted butter, and eggs. Mix wet ingredients into dry ingredients. Add in the pickled jalapenos and gently fold into the batter
  3. Preheat the waffle iron to the desired setting
  4. Grease the waffle iron with olive oil cooking spray and add about 3/4 cup of batter into the waffle iron
  5. Cook according to waffle iron instructions and remove when golden brown
  6. Serve warm topped with fried egg, black beans, and salsa or chili!
