Jalapeño Cornbread Waffles Rancheros

Ready to spice up breakfast? These waffles incorporate our jalapeño pepper slices for a kick of heat against the sweet cornbread batter.
Ingredients
- 1.5 cup cornmeal
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 eggs
- 2 cups milk
- 3 tablespoons sugar or honey
- 4 tablespoons of melted butter slightly cooled
- 2-3 tsp of Roland® Hot Jalapeño Peppers Sliced
Optional For Serving:
Fried egg, salsa or chili, and black beans
Directions
- In a large bowl, mix flour, cornmeal, baking powder, sugar, and salt
- In another bowl, mix milk, melted butter, and eggs. Mix wet ingredients into dry ingredients. Add in the pickled jalapenos and gently fold into the batter
- Preheat the waffle iron to the desired setting
- Grease the waffle iron with olive oil cooking spray and add about 3/4 cup of batter into the waffle iron
- Cook according to waffle iron instructions and remove when golden brown
- Serve warm topped with fried egg, black beans, and salsa or chili!
