Italian Chopped Salad

For the Salad:
- 1 medium romaine heart, sliced or finely chopped
- 1/2 small head radicchio, leaves separated and torn
- 4-5 oz salami (hard or spicy), chopped
- 1 medium cucumber, chopped
- 8 oz cherry tomatoes, halved
- 1/2 cup Roland® Chickpeas
- 1/2 cup Roland® Sliced Pepperoncini
- 3/4 cup Roland® Pitted Kalamata Olives
For the Dressing:
- 1/3 loosely packed cup shaved Pecorino Romano or Parmesan
- 1 small garlic clove, finely grated
- 1 tablespoon mayonnaise
- Juice of 1/2 lemon
- 3 tablespoons Roland® Red Wine Vinegar
- 1/4 teaspoon Italian seasoning
- 1/3 cup olive oil
- Salt to taste
Directions
- In a small bowl, combine the dressing ingredients and let sit for ten minutes to allow the flavors to come together
- While the dressing is resting, combine the salad ingredients in a large bowl
- Add dressing to taste and toss to coat. Serve immediately and enjoy! (Tip: extra dressing can be stored in an airtight container in the refrigerator for up to one week)
