Italian Chopped Salad

Make this viral salad recipe at home! It's briny, bright, and delicious. This recipe by @theboldappetite makes for the perfect easy weeknight dinner or elevated entertaining dish.

 

For the Salad:

For the Dressing:

  • 1/3 loosely packed cup shaved Pecorino Romano or Parmesan
  • 1 small garlic clove, finely grated
  • 1 tablespoon mayonnaise
  • Juice of 1/2 lemon
  • 3 tablespoons Roland® Red Wine Vinegar
  • 1/4 teaspoon Italian seasoning
  • 1/3 cup olive oil
  • Salt to taste

Directions

  1. In a small bowl, combine the dressing ingredients and let sit for ten minutes to allow the flavors to come together
  2. While the dressing is resting, combine the salad ingredients in a large bowl
  3. Add dressing to taste and toss to coat. Serve immediately and enjoy! (Tip: extra dressing can be stored in an airtight container in the refrigerator for up to one week)
