Holiday Cheese Board with Chipotle Bacon Jam

This holiday cheese board has all the flavor, color, and flair you could ask for! With a chipotle bacon jam, hot honey baked brie, and all the accoutrements, it's perfect for any kind of festivity.
For the Chipotle Bacon Jam
- 1 lb (450g) diced bacon
- 1 large or 2 medium yellow onions, finely diced (or 1 cup Roland® Sauteed Onions)
- 4 garlic cloves, minced
- 1/4 cup brown sugar
- 1/3 cup Roland® Fig Jam
- ⅓cup Roland® Apple Cider Vinegar
- ¼ cup strong black coffee
- 1 tablespoon Roland® Maple Syrup
- 1 tablespoon Roland® Balsamic Vinegar
- 2-3 tbs Roland® Diced Chipotle Peppers in Adobo
- Salt and black pepper to taste
For the Aji Rocoto Hot Honey Baked Brie
- 1/2 cup honey
- 1 tablespoon Aji Rocoto paste
- 1 teaspoon lime juice
- 1 teaspoon finely chopped thyme
- Salt to taste
- 1 wheel (8 oz) Brie
For the Garlic & Herb Crusted Goat Cheese
- 8 oz plain goat cheese log
- 3-4 Roland® Garlic Confit cloves, drained
- ½ cup finely chopped fresh herbs, such as:
- 2 tablespoons finely chopped Flat-leaf parsley
- 2 tablespoons finely chopped Chives
- 2 tablespoons finely chopped dill
- 1 teaspoon finely chopped fresh thyme
- 1 tablespoon lemon zest
- 1 tablespoon orange zest
- Sea salt and black pepper to taste

For the Chipotle Bacon Jam
- In a large skillet over medium heat, cook chopped bacon until browned and crisp. Scoop out the bacon and reserve 2 tablespoons of fat in the pan. Either add Roland Sauteed Onions or fresh onion and cook until caramelized, around 15 mins for fresh onion. Add the garlic at the end and cook for 1-2 minutes.
- Stir in brown sugar, coffee, apple cider vinegar, maple syrup, fig jam, balsamic vinegar and diced chipotles. Return the bacon to the pan. Add black pepper. Bring to a simmer. Let it simmer on low heat for 30–40 minutes, stirring occasionally, until thick. Add extra coffee to adjust viscosity as needed. Cool and serve.
For the Aji Rocoto Hot Honey Baked Brie
- Preheat oven to 375. Combine honey, aji rocoto paste, lime juice, salt, and chopped thyme. Place the brie in a ceramic serving dish and bake for 10-15 minutes. Once baked, drizzle on the hot honey and garnish with fresh sprigs of thyme.
For the Garlic & Herb Crusted Goat Cheese
- Roughly chop or mash 2–3 cloves of the pre-made garlic confit into a spreadable paste. Roll onto the surface of the goat cheese.
- In a shallow dish, mix the chopped fresh herbs, lemon zest, salt, and pepper
- Gently press the garlic-coated goat cheese log into the herb mixture, turning to coat all sides evenly. Use wax paper to help shape if needed. Chill for around 10 minutes and serve.
