
Clarified Margarita with Mango, Lime, & Harissa Popsicles

This recipe takes your classic margarita to the next level with refreshing mango, zesty lime, and a kick of harissa, finished with a refreshing popsicle for the perfect touch!
For the Popsicles
- 2 tablespoons Roland® Harissa Red Chili Spread
- 1 cup water
- 3 tablespoons agave nectar
- 5 oz Roland® Mango (including juice)
- 1 ½ tablespoons agave nectar
- Zest and juice of 1 lime
- 1 ½ tablespoons Roland® Tamarind Concentrate
- 3 tablespoons agave nectar
- 1 cup water
For the Margarita
- 3 tablespoons agave nectar
- 1 cup water
- 1 teaspoon Roland® Harissa Spice Blend
- 2 tablespoons salt
- 3oz lime juice
- 3oz simple syrup
- 8oz Tequila Blanco
- 3 1/2oz whole milk
Directions
- Combine the tamarind concentrate with water and agave syrup. Fill the popsicle mold with a short layer of the liquid (around 1 tablespoons) and freeze for 30 minutes. Place the popsicle stick in the mold and put back in the freezer until completely frozen, around 1 hour
- Blend the mango, lime zest, agave nectar and juice. Strain well. Fill the popsicle mold up half way (1.5 tbs of the mango mixture) and freeze for another hour
- Combine the harissa, water and agave nectar. Once the previous layers are set, pour in the harissa layer until the mold is full (1 tablespoon). Place back in the freezer for another 2-3 hours until fully set
- For the cocktail, combine the lime juice, simple syrup and tequila. In another glass, pour in the milk. Pour the cocktail mixture into the milk and allow to sit for 20 to 30 minutes
- Set a coffee filter over another glass to catch the clarified cocktail. Pour the cocktail over the coffee filter and allow it to slowly clarify for a few hours
- To serve, rim the glass with the harissa and salt mixture. Pour in the chilled clarified margarita and prop up the popsicle in the glass
